Gingerbread Blondies

After testing cookie recipes for weeks, you’d think I’d get tired of baking cookies, right?

You are correct! So, I was supposed to be taking a night off, watching TV with my husband, when he mentioned how much he likes spice cake. Out of nowhere, I got up and started baking these Gingerbread Blondies. It was 11:30 at night, and I’d worked ten hours that day, but I had to see if they’d work. They did.

These are chewy, rich blondies with an amazing gingerbread flavor. They take 10 minutes to mix and 25 minutes to bake and utilize one pot. If you’re feeling really decadent, warm one slightly and top with vanilla ice cream and caramel and whipped cream. Treat yourself. You won’t be wearing a bathing suit for another 6 months, if you live in a place with weather like ours.

 

Preheat oven to 350°F. Spray an 8 inch square pan with baking spray. Line with parchment,
leaving an overhang on 2 sides. Make sure the parchment fits snugly, so there aren’t gaps.

 

 

 

 

Melt the butter in a medium size pot over medium heat. Cook for about 4-6 minutes till butter is foaming and turns a medium golden brown. Swirl the pan frequently and watch carefully as butter can quickly go from golden to burned. Once it looks a little brown, remove from heat and cool for 5 minutes.
Add sugars and stir well. Add eggs and vanilla stir until incorporated.
Add flour, baking powder and spices and salt. Stir until all flour has disappeared, don’t overmix.


Pour batter into prepared pan and spread evenly.
Bake for 25-30 minutes, until toothpick comes out mostly clean. The top should look shiny and crackly. The edges should look firm.
Allow to cool completely and use paper overhang to lift from pan. Cut into squares and enjoy!

 

 

 

 

Note: I cut out a little gingerbread man from paper, placed it in the center of the blondies and dusted with powdered sugar. Then I removed the paper to leave a festive design. It’s always fun to be a little extra.

Chewy blondies are made festive with the flavors of brown butter and gingerbread in this cozy holiday treat.

Ingredients

  • 1 cup butter

  • 1/2 cup whit sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1 1/4 teaspoon cinnamon
  • 1 1/4 teaspoon ground ginger
  • 1 teaspoon ground allspice
  • ½ teaspoon ground cloves
  • 1 teaspoon salt
