Savory Spinach and Cheese Squares

Nothing is harder when you’re trying to eat healthy than going to a party or barbecue. There are dips and chips and cheese and crackers and everything else you shouldn’t be eating. Sometimes I like to bring something that tastes good to everyone, without them knowing that they’re eating something healthy. I know I can have a couple and save my calories for the actual meal, but I still enjoy compliments for bringing something tasty!

These little squares are great as an appetizer. Each square has 60 calories or 2 WW Smart Points. The sun-dried tomato gives a little burst of sweetness while the pine nuts provide a little nutty crunch. And of course, they’re cheesy, garlicky goodness, so they’re sure to please! I also like to make a batch of these and freeze them in zipper bags. I can pull out one or two at a time and have them as an easy side or a satisfying snack. You can actually make these two ways: save a little cheese to sprinkle on top so it has a cheesy layer, or mix all of the cheese in so they can be served at room temperature with a little dollop of light sour cream. I hope you try them and enjoy them. They’re fun to share with friends as an easy and unusual starter.

 

Preheat oven to 375°F. Spray a 10×15 inch cake or brownie pan with baker’s spray. Sometimes, I just use a disposable lasagna pan for this.

Measure flour, baking powder, salt and garlic powder in a large mixing bowl.

Add in eggs and buttermilk. Stir until just combined.

Add in onion, sun-dried tomatoes, pine nuts, romano cheese, and 3/4 of shredded cheese. If you are choosing to not have a cheese layer on top, mix in ALL of the shredded cheese now.

Mix well so everything is combined and evenly distributed. Spread batter into prepared pan and even out with rubber spatula. If you are doing a cheese layer, sprinkle the remaining cheese evenly over the pan.

Bake for 30-35 minutes, until a skewer comes out clean.

Let cool for a few minutes and cut into 24 squares. That’s it! Yummy Savory Spinach and Cheese Squares! Great for a party, a snack, or a side dish! I love them!

Ingredients

  • 1 cup unbleached all-purpose flour
  • 1 tsp baking powder
  • 1 1/2 tsp salt
  • 1 tablespoon garlic powder
  • 1 1/4 cup low fat buttermilk (1%)
  • 2 large eggs
  • 1 onion chopped (1 cup total)
  • 2 12 oz. bags of chopped frozen spinach, thawed and squeezed of as much moisture as possible
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/4 cup pine nuts
  • 10 oz. reduced fat Italian blend cheese (Sargento 4-cheese Italian)
  • 1/4 cup grated romano cheese
